Is it too late to share summer cocktails? It’s not even mid‑August and already people are talking about autumn. I’m still clinging to sunshine and outdoor gatherings.

I’m hopeless at tanning — I go from pale to slightly pink and back again — but I do love a bright, fizzy drink on a warm day. When I spotted a jar of spiced winter berry cordial at a farm shop in Wilmslow, I almost dismissed it as too seasonal. Then I remembered a spicy cocktail I’d enjoyed recently for Chris’s birthday and decided to adapt that flavour into a summer cooler.

The cordial I used was made by Belvoir and it’s wonderfully fragrant and spiced. Other brands make similar cordials (Bottlegreen and Rocks Organic, for example) and they should work just as well if you prefer a different label. The spiced berry cordial is rich and sweet, so it balances beautifully with the sparkle of ginger ale and the sharpness of fresh lemon.

We polished off this jug at a BBQ yesterday and the kids loved it too. It was a handy distraction while I wrestled with preparing sea bass for the grill — filleting whole fish is one of those things I’ll need to practise more so I don’t end up with tiny shredded fillets next time.

This drink has become my new favourite for summer get‑togethers. The recipe below makes about 8 glasses and works out at roughly 71 calories per glass, so it’s a lighter option for a crowd.

Ingredients

  • 250 ml (8.5 fl oz) Belvoir Spiced Winter Berries Cordial
  • 125 ml (4.2 fl oz) Fresh lemon juice (about 4 lemons)
  • 1 Litre Diet Canada Dry Ginger Ale

Instructions

  • Pour the spiced berry cordial into a 1.5 litre jug. Add the fresh lemon juice, then pour in the ginger ale and stir gently to combine.
  • Serve over plenty of ice and garnish with lemon slices. For a decorative touch, add a few frozen berries or a sprig of mint.
