Spicy Cajun Shrimp Noodles with Garlic Butter Sauce

Juicy king prawns in a spicy, slightly creamy sauce with plenty of noodles — this Cajun prawn noodle stir-fry makes a delicious, lip-smacking dinner. Using ready-cooked noodles speeds things up and keeps it to one pan.

Cajun spice is a fantastic shortcut for big flavour. Typical blends include black and white pepper, salt, cayenne, paprika, onion and garlic powder; some mixes add oregano, thyme, fennel, cumin or a touch of sugar. I treat it as an “everything spice” — a quick way to add heat and depth without opening lots of jars.

For this recipe I coat raw king prawns in Cajun seasoning, then fry them briefly before combining with noodles and vegetables. I also add a spoonful of crème fraîche to bring a gentle, silky balance to the tangy, spicy sauce. If you don’t have crème fraîche, use a little double (heavy) cream or full-fat coconut milk instead.

📋 Ingredients

Noodles – Ready-cooked egg noodles are used to keep this quick, but dried noodles work fine if you cook them first according to the packet.

Prawns – Raw king prawns, peeled and deveined. Frozen is fine — defrost over a sieve so excess liquid drains away.

Oil – Use a neutral oil such as vegetable, sunflower or avocado oil for frying.

Chicken stock – Use a crumbled stock cube dissolved in hot water or a homemade chicken stock.

  1. Coat the king prawns in Cajun seasoning, fry until pink, then remove from the pan.
  2. Fry the pepper and onion in oil with garlic, chilli, salt and pepper. Add the stock, Worcestershire sauce and crème fraîche and bring just to the boil.
  3. Add the ready-cooked noodles and stir-fry until hot, then return the prawns to the pan. Finish with chopped coriander and a sprinkle of chilli flakes.

Pro Tip

If you prefer, swap the crème fraîche for 3 tablespoons of full-fat coconut milk or double (heavy) cream.

Ingredients

Cajun Prawns

  • 300 g (10.5oz) raw king prawns, peeled and deveined
  • 2 tablespoons Cajun spice mix
  • 1 tablespoon oil

Stir Fry

  • 1 tablespoon oil
  • 1 onion, peeled and diced
  • 1 red bell pepper, deseeded and diced
  • 1 red chilli, sliced
  • 2 cloves garlic, peeled and minced
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 180 ml (3/4 cup) chicken stock
  • 1 tablespoon Worcestershire sauce
  • 1 heaped tablespoon crème fraîche

Noodles

  • 400 g (14oz) cooked egg noodles

To serve

  • 2 tablespoons finely chopped fresh coriander (cilantro)
  • Chilli flakes, to taste

Instructions

  • Put the prawns in a bowl and sprinkle with the Cajun spice. Toss to coat and set aside.
  • Heat 1 tablespoon oil in a large frying pan over high heat. Add the prawns and cook for 2–3 minutes, turning once, until pink. Remove to a bowl.
  • Reduce heat to medium and add another tablespoon of oil. Add the onion, pepper, chilli and garlic with the salt and black pepper. Fry for 4–5 minutes, stirring, until the onion softens.
  • Pour in the chicken stock, Worcestershire sauce and crème fraîche. Stir and heat until just coming to the boil.
  • Add the cooked noodles and heat for 4–5 minutes, stirring often, until hot. Return the prawns to the pan and cook for a further minute.
  • Remove from the heat, stir through the chopped coriander and serve with chilli flakes on top.
