Ingredients

  • 8 small floury potatoes – such as Maris Pipers or Russets
  • 1 tbsp oil
  • 200 g (7 oz) pancetta cubes (or bacon lardons, diced bacon)
  • 2 tbsp double/heavy cream
  • 2 tbsp salted butter
  • ¼ tsp salt
  • ½ tsp pepper
  • 175 g (1 3/4 cups) of grated cheddar or mixed cheese (we used a mix of 75% mature cheddar and 25% red Leicester)
  • 4 tbsp sour cream (for serving)
  • 4 spring onions (scallions), chopped (for serving)

Instructions

  1. Preheat your oven to 190C/375F (fan).
  2. Prick your potatoes with a fork all over. To speed up cooking, microwave all the potatoes on high for 10 minutes. (If skipping the microwave, add an extra 20 minutes to the oven baking time.)
  3. Place your potatoes directly on the oven shelf and bake for 35-45 minutes (or 55-65 minutes if not microwaved) until they are crisp on the outside and soft and tender on the inside. You can check doneness by easily sliding a knife into the center of a potato.
  4. Meanwhile, heat the oil in a small frying pan/skillet over a medium-high heat. Add the pancetta cubes (or bacon lardons) and cook for 5-6 minutes, stirring occasionally, until they are beautifully crispy. Remove the crispy pancetta from the pan and set aside on a paper towel-lined plate to drain excess fat.
  5. Once your potatoes are ready, carefully remove them from the oven. Let them cool slightly until they are easy to handle. Carefully chop each potato in half lengthwise. Using a spoon, scoop out the soft potato flesh into a large mixing bowl, ensuring you leave a thin border of potato (about ¼ inch) attached to the skin to maintain structural integrity.
  6. To the scooped potato flesh, add the cream, butter, salt, and pepper. Mash everything together using a potato masher or a fork until the potato mixture is light, creamy, and fluffy.
  7. Stir in the crispy pancetta (or bacon) and most of the grated cheese, reserving a small handful of cheese for sprinkling on top of the skins before the final bake. Mix until all ingredients are well combined.
  8. Take one of the hollowed-out potato skins and generously spoon the fluffy potato mixture back inside. Place the stuffed potato half in a baking dish. Repeat this process with the remaining potato skins, ensuring each is well-filled. Sprinkle a little of the reserved cheese on top of each stuffed potato skin.
  9. Return the baking dish with all the stuffed potatoes to the preheated oven. Bake for another 10-15 minutes, or until the cheese on top is melted and bubbly, and the potato filling is heated through.
  10. Remove from the oven and serve immediately. Garnish generously with a dollop of sour cream and a sprinkling of fresh chopped spring onions (scallions) for the perfect finish.

Notes

Make Ahead:

Loaded potato skins are a fantastic make-ahead option, perfect for entertaining or meal prepping. To prepare them in advance, follow all instructions up to the end of stage 7 (stuffing the potato skins with the filling).
Allow the stuffed potatoes to cool completely to room temperature. Once cooled, cover them tightly with plastic wrap or aluminum foil and refrigerate for up to two days. When you’re ready to serve, remove from the refrigerator, uncover, and bake in a preheated oven (190C/375F) for approximately 20-25 minutes, or until they are piping hot all the way through and the cheese is melted and bubbly.
You can also freeze them! After stuffing and cooling, place them on a baking sheet and flash freeze for an hour. Once solid, transfer to a freezer-safe bag or container and freeze for up to 3 months. Bake from frozen at 190C/375F for 30-40 minutes, or until heated through.
