Blueberry and Greek Yogurt Granola Bars – a healthy make-ahead breakfast made with fresh and dried blueberries.

Ingredients

Breakfast Bars:

  • 50 ml (1/4 cup minus 2 tsp) Greek Yogurt
  • 50 g (1/3 cup) fresh blueberries, lightly crushed using a fork
  • 200 g (2 cups + 1 tbsp) rolled oats (a gluten-free variety if required)
  • 4 tbsp honey
  • 1 tbsp virgin coconut oil, melted
  • 75 g (1/2 cup minus 1 tsp) dried blueberries
  • 1 egg white (from a large egg)
  • 1 pinch of salt

Greek Yogurt Drizzle:

  • 5 tbsp icing/powdered sugar
  • 1 tbsp Greek yogurt

Instructions

  1. Preheat your oven to 170°C/325°F (fan assisted) and line a 20x20cm (8×8 inch) baking tin with baking parchment, leaving an overhang on two sides for easy removal.
  2. In a large mixing bowl, combine all of the breakfast bar ingredients: Greek yogurt, crushed fresh blueberries, rolled oats, honey, melted virgin coconut oil, dried blueberries, egg white, and salt. Mix thoroughly until all ingredients are well combined and the mixture is evenly coated.
  3. Transfer the mixture into your prepared baking tin. This step is crucial for achieving firm bars. Flatten and squash the mixture down very hard. You can use the back of a spoon, or for even better compaction and to minimize crumbling, place a piece of greaseproof paper on top of the flattened mixture, then place another same-size baking tin on top and press down with significant force. This creates a denser bar. Ensure the mixture reaches all edges of the tin.
  4. Place the tin in the preheated oven and bake for 20-25 minutes, or until the top is lightly golden brown.
  5. Once baked, remove the tin from the oven and allow the bars to cool in the tin for 10 minutes. This initial cooling helps them set. Then, using the baking parchment overhang, lift the entire slab of granola from the tin and transfer it to a chopping board. Let it cool completely at room temperature before attempting to cut. This may take a couple of hours.
  6. Once completely cool, use a sharp knife to cut the large slab into 12 even bars. The bars should slice cleanly. If you find them crumbling slightly when slicing, place the entire cooled slab in the fridge for a couple of hours (or even overnight) before trying to slice the remaining bars – chilling helps them firm up significantly.
  7. While the bars are cooling, prepare the Greek yogurt drizzle. In a small bowl, whisk the icing/powdered sugar with half of the Greek yogurt. Gradually add more Greek yogurt, a little at a time, until you achieve a thick but pourable sauce consistency.
  8. Drizzle this delicious Greek yogurt mixture generously over the cooled granola bars. Serve immediately, or let the drizzle set for about half an hour if you prefer a firmer topping.
  9. Store any remaining bars in an airtight container at room temperature for 3-4 days, or in the refrigerator for up to a week. For longer storage, individual bars can be wrapped and frozen for up to a month.
