As the weather cools, pulling out the slow cooker becomes irresistible. I believe the slow cooker should do the hard work while delivering deep, well-developed flavours. I favour cuts that reward long, gentle cooking — think chuck, shin and short ribs — combined with plenty of aromatics and a finishing touch that ties everything together.

What Slow Cooker do I use?
I’ve used several models over the years, but I tend to recommend a slow cooker with a searing or sauté function because it saves on washing up and gives better colour and flavour. If your slow cooker doesn’t have that feature, simply brown ingredients in a frying pan before transferring them to the slow cooker.
