Ingredients
- 2 tbsp oil
- 500 g (1.1 lbs) minced beef (10–15% fat)
- 3 cloves garlic, peeled and minced
- 3 bird’s eye chillies, finely sliced (optional)
- 2 tsp lemongrass paste
- 6 tbsp (1/3 cup) tightly packed light brown sugar
- 1.5 tbsp fish sauce
- 1 tbsp dark soy sauce
- ¼ tsp salt
- ¼ tsp white pepper
- 5 spring onions, finely sliced (green and white parts)
Pickled onion and carrot
- 1 small red onion, peeled and thinly sliced
- 1 large carrot, peeled and sliced into thin strips
- 3 tbsp cider or white wine vinegar
- ½ tsp sugar
To serve
- 840 g (4 cups) cooked rice
- 4 baby cucumbers, chopped (or half a cucumber)
- 8 cherry tomatoes, quartered
- 1 tbsp mixed black and white sesame seeds
Instructions
- Start with the pickled veg: combine sliced red onion and carrot in a shallow bowl, drizzle over the vinegar and sprinkle the sugar. Toss and set aside to marinate.
- Heat oil in a large frying pan over medium-high heat. Add the minced beef and fry 5–6 minutes, breaking up any lumps, until lightly browned.
- Add garlic, chillies and lemongrass paste and stir to combine.
- Stir in the brown sugar and continue frying over a high heat for 4–5 minutes until the beef darkens and caramelizes.
- Add fish sauce, dark soy sauce, salt, white pepper and spring onions. Stir and fry for another minute, then remove from heat.
- Divide the cooked rice between four bowls. Top with the caramelized beef, arrange the pickled onion and carrot, add cucumber and cherry tomatoes. Sprinkle with sesame seeds and serve.
Notes
Make ahead: Pickled veg and the mince can be prepared up to two days in advance. Reheat the mince until piping hot. For best texture, refresh the mince in a hot frying pan with a splash of oil.
