📋 Ingredients Spotlight

Crafting this flavorful dish requires a handful of simple, readily available ingredients. Each component plays a vital role in creating the perfect balance of taste and texture. Here’s a closer look at what makes this recipe shine:
- Cod Fillets: The star of our show! We recommend using cod for this recipe due to its firm, yet flaky texture and mild, slightly sweet flavor. This makes it an ideal canvas for absorbing the bold Cajun spices. You’ll typically need about 4 fillets, which collectively should weigh around 600g (or 1.3 lbs), with each fillet being approximately 150g (5.3 oz). If fresh cod isn’t readily available, don’t fret! Other chunky white fish like hake, pollock, or haddock are excellent, easy-to-find alternatives that will perform beautifully. For those who enjoy a richer fish, salmon also works wonderfully with the Cajun seasoning, offering a different but equally delicious experience.
- Floury White Potatoes: These are the base for our irresistible smoky wedges. Opt for varieties like Russet or Idaho potatoes, known for their fluffy interior when baked. The best part? There’s absolutely no need to peel them! Simply give them a good wash and slice them into even wedges. Leaving the skin on not only adds a rustic, appealing look but also provides extra fiber and preserves valuable nutrients, while saving you precious time in the kitchen.
- Cajun Seasoning: This is where the magic truly begins. Cajun seasoning is a quintessential blend of spices that embodies the vibrant flavors of Louisiana cuisine. It typically includes paprika, cayenne pepper (for heat), garlic powder, onion powder, dried oregano, and thyme, among others. This robust mix delivers a warm, complex, and slightly spicy kick that transforms both the cod and potatoes. You can usually find pre-made Cajun seasoning in the herbs and seasonings aisle of most larger supermarkets. For adventurous cooks, making your own Cajun seasoning blend allows you to customize the spice level and flavor profile to your exact preference.
- Smoked Paprika: A crucial ingredient that contributes significantly to the “smoky” element in our potato wedges. Smoked paprika, also known as Pimentón, is made from peppers that have been dried and smoked over oak fires, imparting a distinctive, deep, savory, and slightly sweet smokiness that cannot be replicated by regular paprika. Do not skip this ingredient if you want to achieve the authentic smoky flavor profile!
- Garlic Powder & Chilli Flakes: These potent additions elevate the overall spice and aromatic notes of the potato wedges. Garlic powder adds a foundational savory depth, while chilli flakes (also known as red pepper flakes) provide a controlled burst of heat. Feel free to adjust the amount of chilli flakes based on your personal tolerance for spice – a little extra can certainly kick things up a notch!
- Olive Oil: Used generously to coat both the fish and potatoes. Olive oil is essential for ensuring that the ingredients cook evenly, crisp up beautifully in the oven, and develop a gorgeous golden-brown exterior while retaining a tender, moist interior. It also acts as a binder for the spices, ensuring they adhere well to the food.
- Salt & Black Pepper: The foundational seasonings that enhance and balance all the other bold flavors in the dish. A good grind of fresh black pepper adds a pungent counterpoint to the spices.
Gathering these simple yet powerful ingredients is the first step towards creating a quick, effortlessly delicious, and profoundly satisfying meal that you’ll want to make again and again!
🍳 How to Make Cajun Cod and Smoky Wedges
Creating this delightful Cajun Cod and Smoky Potato Wedges dinner is incredibly straightforward. Follow these easy, step-by-step instructions to achieve perfect results every time. Remember, the full, printable recipe card with exact measurements and detailed nutritional information is conveniently located further down this page.
- Preheat the Oven & Prepare Potatoes: Begin by preheating your oven to a precise 200ºC (400ºF) on the fan-assisted setting. This ensures optimal roasting conditions from the start. While your oven is coming to temperature, thoroughly wash your floury white potatoes. There’s no need for peeling; simply slice them into even-sized wedges. Uniformity is key here for consistent cooking.
- Season the Potato Wedges: Place all the prepared potato wedges onto a large, sturdy baking tray (a sheet pan works perfectly). Evenly sprinkle them with the dry seasoning mix: salt, ground black pepper, that essential smoky paprika, garlic powder, and the chilli flakes. Using your hands or a large spoon, toss everything together vigorously. Make sure every single potato wedge is thoroughly coated with this aromatic spice blend.
- Oil and First Bake for Potatoes: Now, drizzle the seasoned potatoes generously with olive oil. Give them another good toss to ensure the oil is evenly distributed over all the spices and potato surfaces. Arrange them in a single layer on the baking tray, ensuring they have enough space and are not overcrowded. This crucial step prevents steaming and promotes maximum crispness. Place the tray in your preheated oven and bake for an initial 20 minutes.
- Prepare the Cod Fillets: While the potatoes are getting a head start in the oven, turn your attention to the star of the dish – the cod fillets. Lay them out on a separate, shallow baking tray. Evenly sprinkle the cod with Cajun spice mix, a touch of salt, and a dash of ground black pepper.
- Rub Spices and Brush with Oil: Gently, but firmly, rub the spice mixture into the cod fillets on all sides. This helps the flavors penetrate the fish. Next, using a pastry brush or simply your fingers, lightly brush the seasoned cod fillets with a little olive oil. This coating helps the spices adhere beautifully, adds moisture to the fish, and promotes a lovely golden-brown crust during baking.
- Combine and Finish Baking: After the initial 20 minutes of baking, carefully remove the potato tray from the oven. Using a spatula, give the wedges a good flip to ensure even crisping on all sides. Return the potato tray to the oven. Immediately place the tray with the seasoned cod fillets on a rack positioned above the potatoes. Continue baking both trays for an additional 10-12 minutes. The cod is perfectly cooked when it turns opaque throughout and flakes easily with a fork. The potato wedges should be beautifully golden brown and delightfully tender on the inside, with a crispy exterior.
- Serve Immediately: As soon as both the fish and potatoes are cooked to perfection, remove both trays from the oven. This dish is truly at its best when served hot and fresh. For a complete and balanced meal, pair it with a crisp, simple green salad. Enjoy your incredibly flavorful and easy-to-make sheet pan dinner!
💡 Pro Tips for Perfection
Achieving a truly outstanding Cajun Cod and Smoky Potato Wedges dinner is easy with a few simple tricks up your sleeve. These expert tips will help you maximize flavor and texture every time:
- Slice Potatoes Evenly: For uniformly cooked and perfectly crispy wedges, it’s essential to slice your potatoes into roughly the same size. Inconsistent sizing can lead to some wedges burning while others remain undercooked. Aim for pieces that are about ½ to ¾ inch thick.
- Avoid Overcrowding the Trays: This is a golden rule for roasting! Always arrange both the potatoes and the cod in a single layer on their respective baking trays. If the trays are too crowded, the food will steam rather than roast, resulting in soggy potatoes and fish that lacks a desirable crust. If necessary, use a third tray or cook in batches to ensure everything has enough space. Proper air circulation is key for crispiness.
- Monitor Fish for Doneness: Cod, being a lean white fish, cooks relatively quickly. Keep a close eye on it during the final 10-12 minutes of baking. Overcooked fish can quickly become dry, tough, and less enjoyable. It’s perfectly cooked when the flesh turns opaque throughout and flakes easily with a fork when gently tested.
- Taste and Adjust Seasoning: While our recipe provides an excellent starting point for seasoning, remember that personal preference varies. Feel free to adjust the amount of Cajun seasoning and chilli flakes to suit your desired spice level. It’s always easier to add more spice later than to try and tone it down!
- Thorough Oven Preheat is Crucial: A properly preheated oven is fundamental for achieving crispy potatoes and perfectly cooked fish within the specified time. Don’t rush this step; allow your oven to reach the full temperature before placing the trays inside. This initial blast of heat helps to sear the exterior of the potatoes, creating that coveted crispy crust.
- Flip for Even Crispness: Don’t forget to flip your potato wedges halfway through their cooking time. This ensures that all sides of the potatoes get direct heat, resulting in an evenly golden-brown and crispy finish.
By following these simple pro tips, you’re guaranteed a restaurant-quality meal right in your own kitchen!
Such a simple yet powerful way to infuse your dinner with incredible flavor, all with minimal effort and maximum reward! This dish exemplifies the beauty of fuss-free cooking, proving that wholesome, delicious meals can be achieved even on the busiest of schedules.

🍽️ What to Serve It With
This Cajun Cod and Smoky Potato Wedges meal is incredibly versatile and pairs wonderfully with a variety of sides, allowing you to create a complete and satisfying dinner experience. Here are some of our favorite suggestions to complement the vibrant flavors of this dish:
- Simple Green Salad: A crisp, refreshing green salad tossed with a light vinaigrette dressing is the quintessential companion for this meal. Its fresh, slightly tangy taste provides a delightful contrast to the warm, spicy notes of the Cajun seasoning, cleansing the palate with every bite.
- Creamy Coleslaw: For a classic Southern-inspired pairing, a homemade creamy or tangy coleslaw offers a lovely crunch and a cool, refreshing counterpoint to the heat of the Cajun spices.
- Steamed or Roasted Vegetables: Boost your meal’s nutritional value and add more vibrant colors with a side of simply prepared vegetables. Broccoli florets, tender green beans, delicate asparagus spears, or sweet corn on the cob all roast beautifully alongside the main dish or can be quickly steamed.
- Rice Pilaf or Quinoa: If you’re looking to make this a heartier, more substantial meal, a side of fluffy rice pilaf or protein-rich quinoa can be an excellent choice. These grains beautifully absorb the savory juices and spices, creating a comforting addition.
- Alternative Potato Sides: While our smoky wedges are undeniably delicious, you could certainly swap them out for other potato preparations. Try homemade air fryer chips for an even quicker crispy potato option, or prepare some creamy mashed sweet potatoes for a delightful touch of sweetness that balances the savory spice.
- A Dollop of Flavorful Sauce: To add an extra layer of zest and complexity, I highly recommend serving this dish with a dollop of your favorite sauce. I particularly enjoy a sweet and spicy kick from sweet chilli sauce. Alternatively, a zesty lemon-garlic aioli, a cooling sour cream and chive dip, or a classic homemade tartar sauce would also be fantastic choices to enhance the overall experience.
Experiment with these suggestions to find your perfect pairing and elevate your Cajun Cod dinner!
This recipe offers a refreshing and healthier alternative to traditional fish and chips, eliminating the need for deep frying without compromising on flavor or satisfaction. It’s a brilliant way to introduce exciting new tastes into your regular weeknight dinner rotation, proving that healthy eating can also be incredibly delicious and remarkably easy! The blend of savory spices with tender fish and crispy potatoes creates a culinary experience that’s both comforting and invigorating, making it a firm family favorite.
🌟 Variations & Substitutions
One of the most appealing aspects of this Cajun Cod recipe is its incredible versatility. It serves as a fantastic blueprint, allowing you to easily experiment with different ingredients and flavor profiles to suit your taste, dietary needs, or simply what you happen to have available in your pantry. Don’t be afraid to get creative and make this recipe truly your own!
- Fish Alternatives: As we’ve highlighted, while cod is excellent, many other fish varieties will shine in this recipe. Any chunky white fish such as hake, haddock, or pollock are fantastic substitutes, offering similar textures and mild flavors that beautifully absorb the Cajun spices. For a richer, more robust dish, consider using salmon fillets; their natural oils pair wonderfully with the seasoning and they bake up beautifully. If you prefer a lighter, faster-cooking fish, tilapia or snapper could also be used, though you might need to slightly reduce the baking time.
- Adjusting the Spice Level:
- For More Heat: If you’re a fan of fiery flavors, feel free to increase the amount of chilli flakes (red pepper flakes) in both the potato and cod seasonings. You could also add a small pinch of pure cayenne pepper to the Cajun spice blend for an extra kick. A dash of your favorite hot sauce drizzled over the cooked fish before serving is another quick way to amp up the heat.
- For Less Heat: If you or your family members are sensitive to spice, simply reduce or omit the chilli flakes entirely. You can also opt for a milder paprika instead of smoked paprika (though you’ll lose some of the smoky depth), or choose a “mild” Cajun seasoning blend which is often available in stores.
- Herbaceous Twists: Fresh herbs can add a wonderful brightness and complexity to the finished dish. A generous sprinkle of freshly chopped parsley, cilantro, or even chives over the cooked fish and potatoes adds a burst of vibrant green color and refreshing flavor.
- Add More Veggies to the Sheet Pan: This is a fantastic way to boost your vegetable intake and create an even more colorful and nutrient-dense meal. During the last 15-20 minutes of the potato baking time, add quick-cooking vegetables to the same tray. Bell peppers (any color, sliced), red onion slices, zucchini or yellow squash, or even whole cherry tomatoes would roast beautifully alongside the potatoes, absorbing all those delicious smoky and spicy flavors. Ensure they are cut into similar sizes for even cooking.
- Citrus Zest and Juice: A squeeze of fresh lemon or lime juice over the cooked fish right before serving can really elevate all the flavors, adding a refreshing tang and brightening the overall profile of the dish. A little zest grated over top can also enhance the aroma.
- Sweet Potato Wedges: For a slightly sweeter and more vibrant side, swap out the regular floury white potatoes for sweet potatoes. Sweet potatoes tend to cook a bit faster, so monitor them closely and adjust the baking time as needed. The sweetness of the potatoes pairs incredibly well with the Cajun spices.
With these variations in mind, you can enjoy this versatile Cajun Cod and Smoky Potato Wedges recipe many times over, always discovering new favorite combinations!
❄️ Storage & Reheating Tips
While this Cajun Cod and Smoky Potato Wedges dish is undoubtedly at its peak flavor and texture when enjoyed fresh out of the oven, it’s certainly possible to save and savor any delicious leftovers. Here’s how to properly store and reheat them to maintain the best quality:
- Storage: Any leftover cooked cod and potato wedges should be stored in separate airtight containers. This separation helps to maintain their individual textures and flavors. Place them in the refrigerator promptly after cooling to room temperature. They will keep well for up to 2-3 days.
- Reheating Cod: Reheating fish can be a delicate process, as it has a tendency to dry out and become rubbery if not handled correctly. For the best results, gently reheat the cod fillets in a preheated oven (around 150°C/300°F) for 10-15 minutes, or until the fish is just warmed through. An air fryer can also work well at a lower temperature (around 160°C/325°F) for a shorter duration (3-5 minutes), giving the fish a slight crispness without overcooking. We generally advise against reheating fish in the microwave, as it often leads to a rubbery texture and can impact the delicate flavor.
- Reheating Potato Wedges: To regain some of their original crispness, the potato wedges are best reheated in a hot oven (200°C/400°F) or an air fryer. Spread them out in a single layer on a baking sheet or in the air fryer basket and heat for 5-10 minutes, or until they are thoroughly heated through and have become crispy again. A microwave will heat them, but they will likely remain soft.
- Not Recommended for Freezing: Due to the delicate nature of cooked fish, which can become dry and change texture upon thawing and reheating, and the tendency of potatoes to become grainy or mushy after being frozen and thawed, this dish is generally not recommended for freezing. It’s best enjoyed fresh or from short-term refrigeration.
Following these tips will help ensure your leftovers are as enjoyable as possible, allowing you to extend the deliciousness of this easy sheet pan meal.
