They’re perfect for leftover roast chicken too — whether you’ve picked up a supermarket rotisserie bird or kept extra from Sunday dinner, there are lots of ideas here to make the most of it.

Nicky’s Notes

I always like to have a few recipes that start with cooked chicken — it removes a whole stage of dinner prep and gets something tasty on the table faster.
You can use a shop-bought rotisserie chicken, pre-cooked chicken pieces, or leftover roast chicken for any of these recipes.
A few tips for using cooked chicken:
- Mix breast and thigh meat where possible. Dark meat is juicier; breast meat is firmer, so a balance gives better texture.
- Add cooked chicken late in the cooking when a recipe calls for it. Since it’s already cooked, it usually only needs to be heated through to avoid drying out.
- Save the carcass if you have a whole bird — it’s perfect for making homemade chicken stock.
- Leftover roast chicken works too — you don’t need to buy a rotisserie chicken just for these dishes.
I often roast a slightly larger bird on purpose so we have enough for another meal the next day. It makes dinner planning so much easier.
