- 1 tablespoon Dijon or American mustard
- 3 garlic cloves, crushed
- 1 tablespoon pickle juice

Add the shredded Romaine, then scatter with the reserved chopped pickles. Top with the reserved grated cheese, then drizzle with a little more burger sauce. HOW TO MAKE CARAMELIZED ONIONS: We highly recommend making a big batch of caramelized onions to have on hand in the fridge (they also freeze exceptionally well!). While they take time, the deep, sweet flavor they impart is absolutely worth the effort. To make them, add a couple of tablespoons of olive oil to a large frying pan over medium heat. Add thinly sliced onions (about six medium onions will look like a lot initially but will reduce significantly). Cook for a few minutes until they begin to soften, then add a little salt and (optionally) about 1 tablespoon of balsamic vinegar. Stir these through the onions, then reduce the heat to very low and continue to cook for about an hour. Stir every couple of minutes to prevent sticking. They are ready when they are deeply golden brown and deliciously sticky. If they start to stick excessively to the bottom of the pan, add a splash of water to deglaze and release them.
MEAT NOT STICKING TO TORTILLA? This is a key step for successful smash tacos. Make sure you REALLY press your tortillas into the hot pan as they cook – a fish slice or a sturdy spatula works perfectly for this.
