Ingredients

For the Chicken Marinade:

  • 3 chicken breasts (about 500g/1.1lbs) chopped into bitesized chunks
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp turmeric powder
  • 1 tsp garam masala

For the Jalfrezi Sauce:

  • 1 tbsp sunflower oil
  • 2 tbsp unsalted butter
  • 1 large onion peeled and sliced
  • 1 red chilli sliced (adjust to taste)
  • 1 green chilli sliced (adjust to taste)
  • 2 cloves garlic peeled and minced
  • 2 tsp minced ginger
  • 1 tsp garam masala
  • 2 tsp turmeric powder
  • 1 ½ tsp salt
  • 2 tsp cumin powder
  • 2 tsp ground coriander
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 400 g (14 oz) tin chopped tomatoes
  • 240 ml (1 cup) chicken stock ensure this is a gluten-free stock if required
  • 1 tbsp tomato puree (paste for US)

To Serve (Optional Garnishes):

  • pilau rice or boiled rice
  • fresh coriander chopped
  • chilli flakes (for extra heat)
  • sliced red onion

Instructions

  • In a bowl, coat the chopped chicken breasts evenly with 1 tsp each of cumin, coriander, turmeric, and garam masala. Cover the bowl and let the chicken marinate in the fridge for 10-15 minutes.
  • Once the chicken has marinated, heat 1 tbsp sunflower oil and 2 tbsp unsalted butter in a large frying pan over high heat. Add the marinated chicken and cook for 4-5 minutes, stirring occasionally, until the chicken is sealed and lightly browned on all sides. Remove the chicken from the pan and set aside.
  • Reduce the heat to low-medium. Add the sliced large onion to the pan (add a little more oil if needed). Cook for 5 minutes, stirring frequently, until the onion softens and becomes translucent.
  • Stir in the sliced red and green chillies, minced garlic, and minced ginger. Cook for a further 2 minutes until fragrant, being careful not to burn the garlic.
  • Add the remaining spices to the pan: 1 tsp garam masala, 2 tsp turmeric, 1 ½ tsp salt, 2 tsp cumin, and 2 tsp ground coriander. Stir well to coat the onions and aromatics, and cook for another 2 minutes to bloom the spices, releasing their full flavor.
  • Now, add the sliced red and green bell peppers, the 400g (14 oz) tin of chopped tomatoes, 240ml (1 cup) chicken stock, and 1 tbsp tomato puree. Stir everything together until well combined.
  • Bring the curry mixture to a boil, then reduce the heat to a simmer. Let it cook for 10 minutes, stirring occasionally, until the sauce has thickened to your desired consistency.
  • Return the seared chicken to the pan and stir to combine. Cook for an additional 2-3 minutes to ensure the chicken is heated through. Stir in fresh coriander (if using) just before serving. Serve immediately with pilau rice or boiled rice, topped with extra fresh coriander, a few chili flakes, and sliced red onion.

Can I make it vegetarian?

Absolutely! This Jalfrezi recipe is highly versatile. To make it vegetarian, simply replace the chicken with an equal amount of your favorite firm vegetables like paneer cubes, mushrooms, cauliflower, or courgette (zucchini). Can I make chicken jalfrezi in the slow cooker?

After adding the peppers, tomatoes, stock, and tomato puree (step 6), bring the mixture to a boil in the pan. Then, transfer everything to your slow cooker. Cook on high for 3-4 hours or on low for 5-6 hours, until the chicken is tender and the flavors are well developed.

Swap out the chicken for lamb:

Lamb Jalfrezi is a fantastic alternative, offering a richer, deeper flavor. However, lamb requires a longer cooking time to become tender. If you choose to use lamb (cut into similar bite-sized chunks), you’ll need to add a little more liquid to the sauce (I recommend an extra 14oz/400g tin of chopped tomatoes or more stock). Simmer the lamb jalfrezi for at least 2 hours, stirring occasionally. Keep an eye on the consistency and add a splash of water or stock if the sauce appears to be drying out too much before the lamb is tender.
