Essential Ingredients for Flavorful Perfection

Crafting these gourmet Bacon, Blue Cheese, and Sweet Chilli Puff Pastry Straws begins with selecting the right components. While the recipe is designed for ease, a few mindful ingredient choices can significantly elevate the final taste and texture, ensuring flaky pastry and a robust flavor blend.

Arrangement of ingredients for bacon blue cheese straws: puff pastry, streaky bacon, blue cheese, sweet chilli jam, parmesan, and sesame seeds.
Gathering your ingredients for a seamless preparation process.
  • Puff Pastry: The cornerstone of these straws is high-quality puff pastry. We highly recommend opting for ready-rolled puff pastry, conveniently found in the refrigerated or freezer section of most grocery stores. This simple shortcut dramatically cuts down on preparation time, eliminating the need for rolling out dough from scratch. For the absolute best flavor and a wonderfully flaky texture, try to find an all-butter puff pastry. The butter content ensures a richer taste and a more delicate, crisp finish that elevates the entire appetizer.
  • Bacon: The smoky, salty element comes from bacon. Free-range, streaky bacon is typically preferred for this recipe due to its higher fat content, which crisps up beautifully and renders a deeper flavor. However, if you prefer a leaner option or it’s what you have on hand, back bacon can also be used. Whichever you choose, ensure it’s finely chopped to distribute its savory notes evenly throughout each straw. You can even pre-crisp the bacon slightly before adding it for an extra layer of texture.
  • Blue Cheese: This ingredient provides the signature tangy and creamy depth. For a balanced flavor that isn’t overwhelmingly pungent, we suggest using a creamy blue cheese. Our personal go-to is often a variety like Castello blue cheese, which offers a delightful mix of piquant tang and smooth creaminess without being too strong. If you’re new to blue cheese or prefer a milder taste, you could explore options like a younger Gorgonzola or even a less intense Danish blue. For those truly averse to blue cheese, a sharp cheddar or grated mozzarella makes an excellent substitute, though it will alter the flavor profile significantly.
  • Sweet Chilli Jam: This secret ingredient brings a lovely sweet heat and a touch of sticky glaze to the straws. Its fruity, spicy notes perfectly complement the richness of the bacon and cheese. If sweet chilli jam isn’t available, or you prefer a different kind of kick, sweet chilli sauce can be used as a direct substitute. For a different twist, hot honey sauce also works wonderfully, offering a sweet and spicy warmth that’s equally delicious.
  • Egg: A single beaten egg is used for an egg wash. This simple step is crucial for achieving that beautiful golden-brown color and glossy finish on your puff pastry straws, as well as helping the parmesan and sesame seeds adhere properly.
  • Grated Parmesan Cheese: Added to the exterior, parmesan provides an extra layer of savory, nutty flavor and a fantastic crispy texture to the crust of the straws.
  • Sesame Seeds: These small seeds offer a subtle nutty flavor and a delicate crunch, enhancing the visual appeal and adding another textural dimension to the finished appetizer. Both white and black sesame seeds work well, or a mix of both.

Step-by-Step Guide: Crafting Your Gourmet Cheese Straws

Creating these impressive appetizers is surprisingly straightforward, thanks to clever shortcuts and a simple twisting technique. Follow these detailed steps for perfectly golden, flavorful cheese straws every time, ready to dazzle your guests with minimal effort.

1. Prepare Your Puff Pastry and Filling

Begin by preheating your oven to 350°F (180°C). This ensures it’s ready to bake once your straws are assembled, preventing soggy pastry. Unroll your sheet of ready-rolled puff pastry; it typically comes on its own sheet of baking paper, which you can conveniently use as your workspace. This saves on cleanup and makes transfer easier. Now, spread the sweet chilli jam evenly over one half of the pastry sheet, reaching almost to the edges. Next, crumble the creamy blue cheese over the jam, aiming for an even distribution. Finally, scatter the chopped streaky bacon over the cheese layer. The goal here is to ensure every bite of your cheese straw gets a taste of all three incredible flavors. Carefully fold the uncovered half of the puff pastry over the filled side. Press down gently to seal the edges, taking care not to push the filling out. For a really secure seal and to slightly flatten the pastry, I often use a rolling pin to gently roll over the folded pastry a couple of times.

2. Slice, Twist, and Arrange

Line an oven tray with fresh baking paper to prevent sticking and ensure easy cleanup. In a small bowl, lightly beat the egg. Using a pastry brush, evenly coat the top surface of your folded pastry with the beaten egg. This egg wash is essential for achieving a beautiful golden crust and for helping the toppings adhere. Next, generously scatter the grated parmesan cheese and sesame seeds over the egg-washed pastry. Press them down gently to ensure they stick. Now, working along the shorter side of the pastry, use a sharp knife or, even better, a pizza cutter, to slice the pastry into strips, each roughly 1 inch wide. A pizza cutter often makes this task quicker and yields cleaner, straighter cuts. Once you have your strips, pick up each one, hold both ends, and twist it around itself about two or three times to create the signature spiral shape of the straw. Don’t worry if they’re not perfectly uniform; a little rustic charm adds to their homemade appeal. Carefully transfer each twisted straw to your prepared baking tray, leaving a little space in between each one to allow for even baking and crispiness. Repeat this process until all your pastry strips have been transformed into delightful twists.

3. Bake to Golden Perfection and Serve

With your twisted straws neatly arranged on the baking tray, it’s time for the oven. Transfer the tray to your preheated oven and bake for approximately 20 minutes. Keep a close eye on them during the last few minutes of baking, as oven temperatures can vary. The straws are perfectly done when they are gloriously golden-brown, puffed up, and wonderfully crispy to the touch. Once baked, carefully remove them from the oven. Allow them to cool slightly on the baking tray before transferring them to a serving platter. For an extra touch of indulgence and flavor, you can drizzle them with a little more sweet chilli jam just before serving, or offer a side of hot honey for dipping. These are best enjoyed warm, but they are equally delicious at room temperature.

Frequently Asked Questions About These Savory Puff Pastry Straws

Here are answers to some common questions that will help you master these delightful Bacon, Blue Cheese, and Sweet Chilli Puff Pastry Straws:

Can these cheese straws be made in advance?

Absolutely! These straws are incredibly versatile and can be prepped in advance, which is fantastic for party planning. You have several options:

  • Chilling: After you’ve twisted the straws, arrange them on the baking tray and pop them into the fridge for a couple of hours. This is perfect if you’re preparing them a few hours before baking.
  • Freezing (Unbaked): For longer-term planning, prepare and twist the straws, then place them (uncovered) in the freezer until they are completely solid. Once frozen, transfer them to a freezer-safe ziplock bag or airtight container. This way, they can be stored for up to a month. When you’re ready to bake, simply transfer them directly from the freezer to the oven (no need to thaw!), adding an extra 5-10 minutes to the usual baking time until they’re golden and crispy.
  • Storing Baked Straws: If you’ve already baked them, they will keep well for about 1 week. Store them in an airtight container in the fridge to maintain freshness. While they are great cold, you can also reheat them in a low oven (around 120°C/250°F) for 5-10 minutes to restore some of their crispiness.

Could I use a different type of cheese?

Certainly! While the creamy blue cheese offers a unique tangy depth that we adore, you can easily adapt this recipe to suit your preferences. If blue cheese isn’t your favorite, feel free to swap it for an equal amount of grated mozzarella for a milder, stretchier cheese straw, or use sharp cheddar for a more classic, robust cheesy flavor. You could also experiment with a blend of cheeses, such as Gruyère or Swiss, for different taste profiles. Just remember that changing the cheese will subtly alter the overall flavor dynamic, but they will still be delicious!

What could I serve with these delicious straws?

These versatile cheese straws are fantastic on their own, but they also pair wonderfully with various accompaniments. I particularly love serving them with an extra bowl of sweet chilli jam for dipping, allowing guests to add more of that delightful sweet heat. Other excellent options include a tangy hot honey sauce, a creamy ranch dip, a robust tomato chutney, or even a simple side of plain Greek yogurt mixed with a pinch of herbs for a cooling contrast. They are also a perfect companion to a glass of crisp white wine or a celebratory sparkling beverage.

Description

Impress your guests with these gorgeous levelled-up cheese straws. Crispy, flaky puff pastry, stuffed with crispy bacon and creamy blue cheese, twisted and baked to perfection. They’re a super easy, crowd-pleasing party appetizer perfect for any occasion.

Ingredients

  • 1 sheet ready rolled puff pastry
  • 2 tablespoons sweet chilli jam
  • 50g creamy blue cheese
  • 6 slices of streaky bacon, chopped
  • 1 egg, beaten
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon sesame seeds

Instructions

  1. Top the puff pastry. Heat your oven to 350°F (180°C). Unroll your sheet of puff pastry – I tend to use the baking paper it’s wrapped in as a base. Spread the sweet chilli jam over one-half of the pastry. Crumble the blue cheese over the sweet chilli, then scatter over the bacon. Try to spread everything out as evenly as you can. Fold the uncovered side over the covered side and press gently to seal (I often use a rolling pin to help with this).
  2. Twist the straws. Line an oven tray with baking paper. Brush the beaten egg all over the pastry, then scatter with the grated parmesan and the sesame seeds. Working with the shorter side, cut the pastry into strips, roughly 1 inch apart. Pick up a strip, then twist it around, about 3 times, to create your straw. Transfer to the prepared tray, then repeat with the rest of the pastry strips.
  3. Bake and serve. Transfer to the oven and bake for 20 minutes, until the straws are golden and super crispy. Arrange on a serving platter and drizzle with extra sweet chilli jam if you like.

Notes

PREP AHEAD: You can twist the straws, then pop them into the fridge for a couple of hours before baking them. Or, twist the straws, then freeze them (uncovered) until solid, and transfer them to ziplock bags. You can then bake them straight from frozen (add five or so minutes onto the baking time).

STORAGE INSTRUCTIONS: The baked straws will keep for 1 week, stored in the fridge, but they’re really best a couple of days after baking. You can heat them in the oven on low (120C/250F) for about 5 – 10 minutes if you like, but they’re great cold too.

SUBSTITUTIONS: If you’re not a fan of blue cheese, you could use grated mozzarella or cheddar. Skip the bacon for a vegetarian version.
